In this masterclass, we deconstruct one of the most technical French classics and rebuild it properly, the way it’s done in professional kitchens. You will work on precision baking of puff pastry for maximum lift and crunch, create a balanced salted caramel, a silky vanilla pastry cream and a stable Chantilly, then assemble a refined, structured Mille-Feuille with clean finishes.
This session is designed for serious bakers and professionals who want to elevate their standards.
– Puff pastry will be pre-laminated and provided so we can focus entirely on baking control, fillings and professional assembly.
– We close with a French tasting moment: Dilmah tea & coffee, madeleines and curated partner tastings, because technique deserves to be enjoyed.
